Keto Air Fryer Burrito

Ingredients:

  • 1 lb (450g) ground beef or chicken
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onions
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup sour cream
  • 1 tbsp olive oil
  • 1 tbsp taco seasoning (make sure it’s low-carb or homemade)
  • 1 package (4-6) low-carb tortilla wraps (store-bought or homemade)
  • Salt and pepper to taste

Instructions:

  1. Cook the Meat:
    • Heat olive oil in a skillet over medium heat. Add ground beef or chicken, breaking it up as it cooks.
    • Season with taco seasoning, salt, and pepper. Cook until fully browned and cooked through, about 5-7 minutes.
    • Drain any excess fat and set the meat aside to cool slightly.
  2. Assemble the Burritos:
    • Warm the low-carb tortillas slightly to make them pliable. This can be done in a dry skillet or microwave.
    • Lay out a tortilla on a flat surface. Add a portion of the cooked meat in the center.
    • Top with shredded cheese, shredded lettuce, diced tomatoes, onions, and black olives if using.
    • Add a dollop of sour cream on top.
  3. Roll the Burritos:
    • Fold the sides of the tortilla over the filling and then roll it up tightly from the bottom. Repeat with remaining tortillas.
  4. Air Fry the Burritos:
    • Preheat your air fryer to 370°F (190°C).
    • Brush or spray the burritos lightly with olive oil to help them crisp up.
    • Place the burritos in the air fryer basket in a single layer (you may need to do this in batches).
    • Cook for 8-10 minutes, turning halfway through, until they are golden and crispy.
  5. Serve:
    • Remove the burritos from the air fryer and let them cool for a minute or two before slicing.
    • Serve with extra sour cream, salsa, or guacamole on the side if desired.
