Air fryer southwest egg rolls

Ingredients:

  • 1 cup cooked chicken breast (shredded)
  • 1/2 cup black beans (drained and rinsed)
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup red bell pepper (diced)
  • 1/2 cup shredded cheese (cheddar, pepper jack, or a blend)
  • 1/4 cup green onions (chopped)
  • 1/4 cup cilantro (chopped)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 6-8 egg roll wrappers
  • Cooking spray

Instructions:

  1. Prepare the filling: In a large bowl, combine the shredded chicken, black beans, corn, red bell pepper, shredded cheese, green onions, cilantro, chili powder, cumin, paprika, garlic powder, salt, and pepper. Mix well.
  2. Assemble the egg rolls: Lay an egg roll wrapper flat, with one corner pointing toward you. Place 2-3 tablespoons of the filling in the center. Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Seal the edge with a bit of water.
  3. Preheat air fryer: Preheat your air fryer to 370°F (188°C) for about 3 minutes.
  4. Cook the egg rolls: Spray the egg rolls lightly with cooking spray and place them in the air fryer basket in a single layer. Air fry for 8-10 minutes, turning them halfway through, until they are golden brown and crispy.
  5. Serve: Serve with salsa, guacamole, or your favorite dipping sauce.
