Chicken Bacon Ranch Roll-Ups
Ingredients:
- 2 cups cooked chicken, shredded or diced
- 8 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 4 large flour tortillas
- 1/2 cup green onions, chopped (optional)
- 1/2 cup diced tomatoes (optional)
- Salt and pepper to taste
Instructions:
- Prepare the Filling:
- In a large bowl, combine the cooked chicken, crumbled bacon, shredded cheddar cheese, and ranch dressing. Mix well until everything is evenly coated. Add salt and pepper to taste.
- If using, stir in the green onions and diced tomatoes.
- Assemble the Roll-Ups:
- Lay a tortilla flat on a clean surface.
- Spread a quarter of the chicken mixture evenly over the tortilla, leaving a small border around the edges.
- Roll the tortilla up tightly, starting from one end and rolling to the other.
- Chill and Slice:
- Place the rolled-up tortilla seam-side down on a plate.
- Repeat the process with the remaining tortillas and chicken mixture.
- Chill the roll-ups in the refrigerator for about 30 minutes to firm up (optional but helps with slicing).
- Serve:
- Slice each roll-up into 1-inch pieces.
- Arrange the pieces on a serving platter.
Tips:
- These roll-ups can be made a few hours ahead of time and stored in the refrigerator until ready to serve.
- For a healthier option, use whole wheat tortillas and turkey bacon.
- Feel free to add other favorite ingredients such as avocado, bell peppers, or cucumbers.
