Keto Bacon Muffins

Ingredients:

  • 6 slices of bacon, cooked and crumbled
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened almond milk (or any low-carb milk alternative)
  • 1/4 cup sour cream
  • 3 large eggs
  • 1/4 cup shredded cheddar cheese (optional)
  • 1/4 cup shredded mozzarella cheese (optional)
  • 1/4 cup melted butter (or coconut oil)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)
  • 1/4 teaspoon ground black pepper

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with butter or cooking spray.
  2. Cook Bacon: Cook the bacon in a skillet over medium heat until crispy. Once done, transfer to a paper towel-lined plate to drain excess grease. Once cooled, crumble the bacon into small pieces.
  3. Mix Dry Ingredients: In a large bowl, combine the almond flour, coconut flour, baking powder, salt, garlic powder, onion powder, and black pepper.
  4. Mix Wet Ingredients: In a separate bowl, whisk together the eggs, melted butter, almond milk, and sour cream until well combined.
  5. Combine Ingredients: Add the wet ingredients to the dry ingredients and mix until a smooth batter forms. Fold in the crumbled bacon and shredded cheeses if using.
  6. Fill Muffin Tin: Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake: Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Cool and Serve: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
