Keto Cheesecake Stuffed Strawberries

Ingredients:
- 1 lb fresh strawberries
- 8 oz cream cheese, softened
- 1/4 cup powdered erythritol or your preferred keto-friendly sweetener
- 1 tsp vanilla extract
- 1 tbsp heavy whipping cream
- Optional: grated dark chocolate or crushed nuts for garnish
Instructions:
- Prepare the Strawberries:
- Wash the strawberries and dry them thoroughly.
- Cut off the green tops and hull the strawberries, creating a small cavity for the cheesecake filling.
- Make the Cheesecake Filling:
- In a medium bowl, combine the softened cream cheese, powdered erythritol, vanilla extract, and heavy whipping cream.
- Beat with an electric mixer until smooth and creamy.
- Stuff the Strawberries:
- Spoon the cheesecake mixture into a piping bag or a ziplock bag with the corner snipped off.
- Pipe the filling into the hulled strawberries, filling them generously.
- Optional Garnish:
- If desired, sprinkle grated dark chocolate or crushed nuts over the top of the stuffed strawberries.
- Chill and Serve:
- Place the stuffed strawberries on a plate or tray.
- Refrigerate for at least 30 minutes to allow the filling to set.
- Serve chilled.
