Lemon Blueberry Donuts – 1 W-W Smart Point!
Ingredients:
- 1 cup whole wheat flour
- 1/2 cup granulated sweetener (like Stevia or Monk Fruit)
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/4 cup almond milk (or any low-calorie milk)
- 1 egg
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 1/2 cup fresh or frozen blueberries
For the Glaze (optional):
- 1/2 cup powdered sweetener
- 1 tablespoon lemon juice
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Lightly spray a donut pan with non-stick cooking spray or use a silicone donut mold.
- Mix Dry Ingredients:
- In a medium bowl, whisk together the whole wheat flour, granulated sweetener, baking powder, baking soda, and salt.
- Mix Wet Ingredients:
- In another bowl, combine the applesauce, almond milk, egg, lemon juice, and lemon zest.
- Combine Ingredients:
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Gently fold in the blueberries.
- Fill Donut Pan:
- Spoon the batter into the donut pan, filling each cavity about 2/3 full.
- Bake:
- Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Glaze (Optional):
- Allow the donuts to cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.
- If using the glaze, mix the powdered sweetener with lemon juice until smooth and drizzle over the cooled donuts.
