Easy Ultimate Macaroni Salad Recipe

Ingredients:
- 4 cups elbow macaroni (or your favorite pasta shape)
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 2 teaspoons sugar
- Salt and black pepper to taste
- 1 cup celery, diced
- 1 cup red bell pepper, diced
- 1 cup red onion, finely chopped
- 1/2 cup pickles, chopped (optional)
- 1/4 cup fresh parsley, chopped
- 3 hard-boiled eggs, chopped (optional)
- 1/2 cup shredded carrot (optional)
- 1/2 cup frozen peas, thawed (optional)
Instructions:
- Cook the Pasta:
- Cook the macaroni according to package instructions until al dente.
- Drain and rinse under cold water to stop the cooking process.
- Let the pasta cool completely.
- Prepare the Dressing:
- In a large bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper until well combined.
- Combine Ingredients:
- Add the cooled pasta to the bowl with the dressing.
- Add the celery, red bell pepper, red onion, pickles (if using), parsley, hard-boiled eggs (if using), shredded carrot (if using), and peas (if using).
- Mix and Chill:
- Toss everything together until the pasta and veggies are evenly coated with the dressing.
- Cover and refrigerate for at least 1 hour to let the flavors meld together.
- Serve:
- Give the salad a good stir before serving.
- Garnish with extra chopped parsley if desired.
