Easy Ultimate Macaroni Salad Recipe

Ingredients:

  • 4 cups elbow macaroni (or your favorite pasta shape)
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons sugar
  • Salt and black pepper to taste
  • 1 cup celery, diced
  • 1 cup red bell pepper, diced
  • 1 cup red onion, finely chopped
  • 1/2 cup pickles, chopped (optional)
  • 1/4 cup fresh parsley, chopped
  • 3 hard-boiled eggs, chopped (optional)
  • 1/2 cup shredded carrot (optional)
  • 1/2 cup frozen peas, thawed (optional)

Instructions:

  1. Cook the Pasta:
    • Cook the macaroni according to package instructions until al dente.
    • Drain and rinse under cold water to stop the cooking process.
    • Let the pasta cool completely.
  2. Prepare the Dressing:
    • In a large bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper until well combined.
  3. Combine Ingredients:
    • Add the cooled pasta to the bowl with the dressing.
    • Add the celery, red bell pepper, red onion, pickles (if using), parsley, hard-boiled eggs (if using), shredded carrot (if using), and peas (if using).
  4. Mix and Chill:
    • Toss everything together until the pasta and veggies are evenly coated with the dressing.
    • Cover and refrigerate for at least 1 hour to let the flavors meld together.
  5. Serve:
    • Give the salad a good stir before serving.
    • Garnish with extra chopped parsley if desired.
