Keto Blueberry Donuts
Ingredients:
- For the Donuts:
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/2 cup granulated erythritol (or your preferred keto sweetener)
- 2 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup melted butter or coconut oil
- 1 tsp vanilla extract
- 1/2 cup fresh or frozen blueberries (if using frozen, don’t thaw them)
- For the Glaze (Optional):
- 1/4 cup powdered erythritol
- 1 tbsp unsweetened almond milk
- 1/4 tsp vanilla extract

Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease a donut pan or use a non-stick silicone mold.
- Prepare the Donut Batter:
- In a large bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, and salt.
- In a separate bowl, beat the eggs, then add the almond milk, melted butter (or coconut oil), and vanilla extract. Mix well.
- Combine the wet ingredients with the dry ingredients, mixing until fully incorporated.
- Gently fold in the blueberries. Be careful not to overmix to avoid breaking the blueberries too much.
- Fill the Donut Pan:
- Spoon the batter into the donut pan, filling each cavity about 2/3 full. Smooth the tops with a spatula if needed.
- Bake the Donuts:
- Bake in the preheated oven for about 15-18 minutes, or until a toothpick inserted into the center comes out clean and the donuts are golden brown.
- Cool the Donuts:
- Let the donuts cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
- Prepare the Glaze (Optional):
- While the donuts are cooling, you can prepare the glaze. In a small bowl, mix the powdered erythritol, almond milk, and vanilla extract until smooth.
- Drizzle the glaze over the cooled donuts or dip the tops of the donuts into the glaze.

- Once the glaze has set (if using), your keto blueberry donuts are ready to enjoy!

- Sweetener Adjustments: Feel free to adjust the sweetness according to your taste or substitute with other keto-friendly sweeteners.
- Blueberries: If using frozen blueberries, do not thaw them to prevent excess moisture in the batter.
