How to Make Roasted Garlic Parmesan Zucchini, Squash, and Tomatoes
Ingredients:
- 2 medium zucchinis, sliced into rounds
- 2 medium yellow squash, sliced into rounds
- 1 pint cherry tomatoes, halved
- 4 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh basil leaves, thinly sliced (optional, for garnish)
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Vegetables: In a large mixing bowl, combine the sliced zucchinis, yellow squash, and halved cherry tomatoes.
- Season: Drizzle olive oil over the vegetables. Add minced garlic, dried oregano, salt, and pepper. Toss well to coat all the vegetables evenly with the seasonings.
- Roast: Spread the seasoned vegetables in a single layer on a baking sheet lined with parchment paper or aluminum foil.
- Bake: Roast in the preheated oven for about 20-25 minutes, or until the vegetables are tender and slightly caramelized.
- Finish: Remove from the oven and sprinkle grated Parmesan cheese over the hot vegetables. If desired, garnish with fresh basil leaves.
- Serve: Transfer to a serving dish and serve warm as a delicious side dish.
