Keto Chocolate Avocado Brownies

Ingredients:

  • 2 ripe avocados
  • 3 large eggs
  • 1/2 cup coconut flour
  • 1/2 cup cocoa powder
  • 1/2 cup granulated erythritol or preferred keto sweetener
  • 1/2 cup sugar-free dark chocolate chips
  • 1/4 cup coconut oil (melted)
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease it lightly.
  2. Prepare the Avocados: Scoop the flesh of the avocados into a blender or food processor. Blend until smooth and creamy.
  3. Mix Wet Ingredients: Add the eggs, melted coconut oil, and vanilla extract to the avocado mixture. Blend again until well combined.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the coconut flour, cocoa powder, erythritol, baking powder, and salt.
  5. Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until a thick batter forms.
  6. Add Chocolate Chips: Fold in the sugar-free dark chocolate chips.
  7. Bake: Pour the batter into the prepared baking pan and spread it out evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Allow the brownies to cool in the pan before cutting into squares. Enjoy!
