Keto Whoopie Pies

Ingredients:
For the cakes:
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated erythritol (or your preferred keto-friendly sweetener)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup almond milk (or any keto-friendly milk alternative)

For the filling:
- 4 oz cream cheese, softened
- 1/4 cup powdered erythritol
- 1/2 teaspoon vanilla extract
- 1/2 cup heavy cream
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Make the cakes:
- In a medium bowl, whisk together almond flour, coconut flour, cocoa powder, baking powder, baking soda, and salt.
- In a separate large bowl, beat together butter and granulated erythritol until creamy. Add eggs and vanilla extract, beating until well combined.
- Gradually add the dry flour mixture to the wet mixture, alternating with almond milk, until everything is fully combined and smooth.
- Form the cakes:
- Spoon or pipe small rounds (about 1 1/2 tablespoons each) onto the prepared baking sheet, leaving space between each for spreading.
- Use wet fingers to shape them into rounded disks (they won’t spread much during baking).
- Bake for 10-12 minutes, until the cakes are set and slightly firm to the touch. Remove from the oven and let cool completely on a wire rack.
- Make the filling:
- In a medium bowl, beat together softened cream cheese, powdered erythritol, and vanilla extract until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- Assemble the whoopie pies:
- Once the cakes are completely cooled, spread a generous amount of filling onto the flat side of one cake.
- Top with another cake, flat side down, to create a sandwich.
- Repeat with the remaining cakes and filling.
- Chill the assembled whoopie pies in the refrigerator for at least 30 minutes before serving to allow the filling to set.
