Vegan Apple Fritters
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2/3 cup almond milk (or any other plant-based milk)
- 1 teaspoon vanilla extract
- 2 cups finely chopped apples (about 2 medium apples)
- Oil for frying (such as vegetable oil or coconut oil)
- Powdered sugar for dusting (optional)
Instructions:
- Prepare the Batter:
- In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- Make the Batter:
- Add the almond milk and vanilla extract to the dry ingredients. Stir until just combined. The batter should be thick and lumpy.
- Add Chopped Apples:
- Fold in the chopped apples until they are evenly distributed in the batter.
- Heat Oil:
- In a deep skillet or frying pan, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C).
- Fry the Fritters:
- Drop spoonfuls of batter into the hot oil, making sure not to overcrowd the pan. Flatten slightly with the back of the spoon. Fry for 2-3 minutes on each side, or until golden brown and cooked through.
- Drain and Cool:
- Remove the fritters from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Allow them to cool slightly.
- Serve:
- Optionally, dust the fritters with powdered sugar before serving. Enjoy warm!
