Caramelized Onion Tart

Ingredients

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup vegan butter (cold and cut into small pieces)
  • 3-4 tablespoons ice water

For the Filling:

  • 4 large onions, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1/2 cup vegan cream cheese
  • 1/4 cup nutritional yeast
  • 1 tablespoon Dijon mustard
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the Crust:
    1. In a large bowl, mix the flour and salt.
    2. Add the cold vegan butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
    3. Add ice water one tablespoon at a time, mixing until the dough starts to come together.
    4. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Caramelize the Onions:
    1. Heat the olive oil in a large skillet over medium heat.
    2. Add the sliced onions and cook, stirring occasionally, for about 20-30 minutes until they are soft and golden brown.
    3. Add the balsamic vinegar, sugar, salt, pepper, and thyme. Cook for an additional 5 minutes until the onions are caramelized and fragrant.
    4. Remove from heat and set aside.
  3. Preheat the Oven:
    1. Preheat your oven to 375°F (190°C).
  4. Roll Out the Crust:
    1. On a lightly floured surface, roll out the dough to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.
    2. Prick the bottom of the crust with a fork to prevent bubbling.
  5. Prepare the Filling:
    1. In a bowl, mix the vegan cream cheese, nutritional yeast, and Dijon mustard until smooth.
    2. Spread this mixture evenly over the bottom of the crust.
  6. Assemble the Tart:
    1. Spread the caramelized onions over the cream cheese mixture in the crust.
    2. Bake for 25-30 minutes or until the crust is golden brown.
  7. Serve:
    1. Let the tart cool slightly before slicing.
    2. Garnish with fresh parsley if desired and serve warm or at room temperature.
