Ingredients:
- 1 pound baby potatoes (red or yellow)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried rosemary (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
- Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Cook Potatoes:
- Place the baby potatoes in a pot and cover with water. Add a pinch of salt.
- Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly.
- Smash Potatoes:
- On a cutting board or baking sheet, gently smash each potato with the bottom of a glass or a potato masher until they are about 1/2 inch thick.
- Season Potatoes:
- In a large bowl, mix the olive oil, garlic powder, onion powder, rosemary (if using), salt, and pepper.
- Gently toss the smashed potatoes in the seasoned olive oil mixture, ensuring they are well-coated.
- Air Fry Potatoes:
- Place the seasoned smashed potatoes in a single layer in the air fryer basket. Do not overcrowd; you may need to cook in batches depending on the size of your air fryer.
- Air fry at 400°F (200°C) for 10-15 minutes, flipping halfway through, until the potatoes are crispy and golden brown.
- Garnish and Serve:
- Transfer the crispy smashed potatoes to a serving dish.
- Sprinkle with fresh parsley and grated Parmesan cheese if desired.
- Serve immediately and enjoy!
