Cauliflower and cheese casserole

Ingredients:

  • 1 large head of cauliflower, cut into florets
  • 2 cups shredded sharp cheddar cheese
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley (optional, for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Cook Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until tender, about 5-6 minutes. Drain well.
  3. Make Cheese Mixture: In a large bowl, mix together the cheddar cheese, sour cream, mayonnaise, Parmesan cheese, minced garlic, salt, and pepper.
  4. Combine and Bake: Gently fold the cooked cauliflower into the cheese mixture until well coated. Spread the cauliflower mixture evenly into the prepared baking dish.
  5. Bake: Bake in the preheated oven for 25-30 minutes, until bubbly and lightly browned on top.
  6. Serve: Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped parsley if desired.
