Sweet Potato Lentil Coconut Curry

Ingredients:
- 2 tablespoons coconut oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 medium sweet potatoes, peeled and diced
- 1 cup red lentils, rinsed and drained
- 1 can (14 oz) coconut milk
- 2 cups vegetable broth
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Cooked rice or naan bread (for serving)
Instructions:
- Heat coconut oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
- Add minced garlic and ginger to the pot and cook for another 2 minutes, stirring frequently.
- Stir in diced sweet potatoes, red lentils, coconut milk, and vegetable broth. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and stir in curry powder, ground cumin, ground turmeric, paprika, salt, and pepper.
- Simmer the curry uncovered for about 20-25 minutes, or until the sweet potatoes are tender and the lentils are cooked through, stirring occasionally.
- Taste and adjust seasoning if necessary.
- Serve the sweet potato lentil coconut curry hot, garnished with fresh chopped cilantro. Enjoy with cooked rice or naan bread.
