Air Fried Stuffed Chicken Breast
Ingredients:
- 2 boneless, skinless chicken breasts
- 1/4 cup of cream cheese, softened
- 1/4 cup of shredded mozzarella cheese
- 1/4 cup of diced sun-dried tomatoes (drained if packed in oil)
- 1/4 cup of chopped spinach (fresh or frozen, thawed and drained)
- 1 clove of garlic, minced
- 1/4 teaspoon of dried basil
- 1/4 teaspoon of dried oregano
- Salt and pepper to taste
- Olive oil spray
Instructions:
- Preheat your air fryer to 375°F (190°C).
- In a mixing bowl, combine the cream cheese, mozzarella cheese, sun-dried tomatoes, spinach, garlic, basil, oregano, salt, and pepper. Mix until well combined.
- Butterfly the chicken breasts by slicing them horizontally, but not all the way through, so they can open like a book.
- Divide the cream cheese mixture evenly between the two chicken breasts, spreading it on one side of each breast.
- Close the chicken breasts, pressing the edges firmly to seal the filling inside.
- Lightly spray the stuffed chicken breasts with olive oil spray.
- Place the stuffed chicken breasts in the air fryer basket, leaving some space between them for air circulation.
- Air fry the stuffed chicken breasts at 375°F (190°C) for 18-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C), and the outside is golden brown and crispy.
- Once cooked, remove the stuffed chicken breasts from the air fryer and let them rest for a few minutes before serving.
- Serve the air-fried stuffed chicken breasts hot, optionally garnished with fresh herbs or a drizzle of balsamic glaze.
