Cottage Cheese Berry Protein Ice Cream

Ingredients:
- 1 cup low-fat cottage cheese
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1 scoop vanilla protein powder
- 2 tablespoons honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened almond milk (or any milk of your choice)
- Ice cubes (optional, for a thicker consistency)
Instructions:
- Freeze the Berries:
- Wash and freeze the mixed berries for at least 2 hours or until they are completely frozen. This will give the ice cream a creamy texture.
- Blend Ingredients:
- In a blender, combine the frozen berries, cottage cheese, vanilla protein powder, honey or maple syrup, vanilla extract, and almond milk.
- If you prefer a thicker consistency, you can add a handful of ice cubes.
- Blend Until Smooth:
- Blend the ingredients until you achieve a smooth and creamy consistency. You may need to stop and scrape down the sides of the blender to ensure all ingredients are well incorporated.
- Taste and Adjust:
- Taste the mixture and adjust sweetness if needed by adding more honey or maple syrup.
- Serve or Freeze:
- You can either serve the ice cream immediately for a soft-serve consistency or transfer it to a container and freeze for an additional 1-2 hours for a firmer texture.

- Before serving, you can top your protein ice cream with additional fresh berries, a drizzle of honey, or a sprinkle of chopped nuts for extra flavor and texture.
