Weight Watchers Chicken Bacon Ranch Potatoes
Ingredients:-
- 4 medium-sized potatoes, washed and cubed
- 1 lb boneless, skinless chicken breasts, diced
- 4 slices turkey bacon, cooked and crumbled
- 1 cup reduced-fat shredded cheddar cheese
- 1/4 cup light ranch dressing
- Salt and pepper to taste
- Chopped fresh chives or green onions for garnish (optional)
Instructions:-
- Preheat your oven to 400°F (200°C).
- Place the cubed potatoes on a baking sheet lined with parchment paper. Season with salt and pepper, and bake for about 20-25 minutes or until they’re tender and lightly golden.
- While the potatoes are baking, in a skillet over medium-high heat, cook the diced chicken until it’s no longer pink and cooked through. Season with salt and pepper to taste.
- Once the potatoes are done, remove them from the oven and keep the oven on.
- In a large mixing bowl, combine the cooked chicken, crumbled turkey bacon, and light ranch dressing. Mix well.
- Spread the chicken and bacon mixture evenly over the baked potatoes on the baking sheet.
- Sprinkle the shredded cheddar cheese on top of the chicken and bacon mixture.
- Place the baking sheet back in the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Once done, remove from the oven and garnish with chopped fresh chives or green onions if desired….
