Weight Watchers Taco Casserole:

Ingredients:
- 1 lb lean ground turkey or chicken
- 1 packet taco seasoning (choose a reduced-sodium version if available)
- 1 cup salsa (choose a low-sugar or sugar-free option)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn
- 1 cup diced tomatoes
- 1 cup diced bell peppers (any color)
- 1 cup shredded reduced-fat cheddar cheese
- 8 oz fat-free Greek yogurt or fat-free sour cream
- 1 cup crushed baked tortilla chips (for topping)
- Fresh cilantro, chopped (optional, for garnish)
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Cook the Meat:
- In a skillet over medium heat, cook the lean ground turkey or chicken until browned. Drain any excess fat.
- Add taco seasoning and prepare according to package instructions.
- Assemble the Casserole:
- In a large mixing bowl, combine the cooked meat, salsa, black beans, frozen corn, diced tomatoes, diced bell peppers, and half of the shredded cheese.
- Transfer to Baking Dish:
- Transfer the mixture to a baking dish sprayed with non-stick cooking spray.
- Bake:
- Bake in the preheated oven for about 20-25 minutes or until the casserole is heated through.
- Add Cheese and Chips:
- Sprinkle the remaining shredded cheese on top of the casserole.
- Sprinkle the crushed baked tortilla chips over the cheese.
- Continue Baking:
- Return the casserole to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove from the oven and let it cool slightly before serving.
- Top each serving with a dollop of fat-free Greek yogurt or fat-free sour cream.
- Garnish with fresh cilantro if desired.
