Weight Watchers Taco Casserole:

Ingredients:

  • 1 lb lean ground turkey or chicken
  • 1 packet taco seasoning (choose a reduced-sodium version if available)
  • 1 cup salsa (choose a low-sugar or sugar-free option)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers (any color)
  • 1 cup shredded reduced-fat cheddar cheese
  • 8 oz fat-free Greek yogurt or fat-free sour cream
  • 1 cup crushed baked tortilla chips (for topping)
  • Fresh cilantro, chopped (optional, for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook the Meat:
    • In a skillet over medium heat, cook the lean ground turkey or chicken until browned. Drain any excess fat.
    • Add taco seasoning and prepare according to package instructions.
  3. Assemble the Casserole:
    • In a large mixing bowl, combine the cooked meat, salsa, black beans, frozen corn, diced tomatoes, diced bell peppers, and half of the shredded cheese.
  4. Transfer to Baking Dish:
    • Transfer the mixture to a baking dish sprayed with non-stick cooking spray.
  5. Bake:
    • Bake in the preheated oven for about 20-25 minutes or until the casserole is heated through.
  6. Add Cheese and Chips:
    • Sprinkle the remaining shredded cheese on top of the casserole.
    • Sprinkle the crushed baked tortilla chips over the cheese.
  7. Continue Baking:
    • Return the casserole to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  8. Serve:
    • Remove from the oven and let it cool slightly before serving.
    • Top each serving with a dollop of fat-free Greek yogurt or fat-free sour cream.
    • Garnish with fresh cilantro if desired.
