WW BLUEBERY CHEESECAKE -YOGURT BARK
Ingredients:
- 2 cups of fat-free Greek yogurt (or a yogurt of your choice)
- 1/4 cup of light cream cheese
- 2 tablespoons of honey (or a sugar-free sweetener if you prefer)
- 1 teaspoon of vanilla extract
- 1 cup of fresh or frozen blueberries
- 1/4 cup of crushed graham crackers (or a low-fat graham cracker substitute)
Instructions:
- In a bowl, mix together the Greek yogurt, light cream cheese, honey, and vanilla extract until well combined.
- Line a baking sheet with parchment paper or a silicone baking mat.
- Spread the yogurt mixture evenly on the lined baking sheet.
- Sprinkle the fresh or frozen blueberries over the yogurt mixture.
- Crush the graham crackers and sprinkle them on top of the yogurt and blueberries.
- Place the baking sheet in the freezer and allow it to freeze for at least 3 hours or until it’s solid.
- Once the yogurt bark is frozen, remove it from the freezer and break it into pieces. You can use a knife or your hands to do this.
- Serve the Blueberry Cheesecake-Yogurt Bark immediately as a cold and satisfying dessert or snack.
This dessert is not only delicious but also relatively low in SmartPoints if you’re following the WW program. It provides the creamy texture of cheesecake, the sweetness of blueberries, and a crunchy graham cracker crust, all while being a healthier alternative to traditional cheesecake.
Remember to adjust the ingredients and portion sizes to meet your dietary preferences and WW plan. Enjoy!
