Molasses Buns

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1/4 cup coconut sugar (or your preferred sweetener)
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 cup coconut oil, melted
  • 1/4 cup unsweetened applesauce
  • 1/4 cup molasses
  • 1/2 cup unsweetened almond milk (or any other plant-based milk)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a baking sheet or line it with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, coconut sugar, baking powder, baking soda, salt, cinnamon, ginger, and cloves.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, unsweetened applesauce, molasses, and almond milk until well combined.
  4. Form the Dough: Make a well in the center of the dry ingredients and pour in the wet mixture. Mix until a dough forms. If the dough is too sticky, add a little more flour.
  5. Shape the Buns: Turn the dough out onto a lightly floured surface. Divide it into 12 equal portions. Roll each portion into a ball and place it on the prepared baking sheet.
  6. Bake: Bake the buns in the preheated oven for about 15-18 minutes, or until they are golden brown and cooked through.
  7. Cool and Enjoy: Remove the buns from the oven and let them cool on a wire rack. Serve the delicious Weight Watchers-friendly Vegan Molasses Buns warm or at room temperature. They’re perfect with a spread of vegan butter or jam.
