Homemade Lentil Stew
Ingredients:
- 1/2 an onion, chopped
- 3 carrots, peeled and diced
- 2 stalks celery, sliced
- 3-4 potatoes, peeled and cubed
- 8 oz of lentils, rinsed and drained
- 6 cups of water
- 1 1/2 tablespoons of Better than Bullion, vegetable
- 1 bay leaf
- Salt and pepper to taste
Instructions:
- In a large pot over medium-high heat, sauté the onion, carrots, and celery for about 10 minutes, stirring occasionally, until soft and golden.
- Add the water, Better than Bullion, potatoes, and bay leaf and bring to a boil.
- Add the lentils and reduce the heat to low. Simmer, covered, for about 30 minutes, or until the lentils and potatoes are tender.
- Season with salt and pepper to taste and remove the bay leaf.
- Enjoy your lentil stew with some bread or crackers, or as a meal on its own.
