Weight Watchers Mongolian Ground Beef Noodles

Ingredients:

  • 8 oz (about 2 cups) whole wheat spaghetti (choose a lower-point option)
  • 1 lb lean ground beef (90% lean or higher)
  • 1/4 cup reduced-sodium soy sauce
  • 1/4 cup hoisin sauce (check for a lower-point option)
  • 1/4 cup water
  • 1/4 cup brown sugar (or a sugar substitute to reduce WW points)
  • 2 cloves garlic, minced
  • 1/2 teaspoon grated ginger
  • 2 green onions, sliced
  • 1 teaspoon sesame oil
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Cooking spray

Instructions:

  1. Cook the whole wheat spaghetti according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, cook the lean ground beef over medium-high heat until it’s browned and cooked through. Break it up into small pieces as it cooks. Once done, remove any excess fat and set the beef aside.
  3. In the same skillet, add the minced garlic and grated ginger. Sauté for about 1-2 minutes until fragrant.
  4. In a mixing bowl, whisk together the reduced-sodium soy sauce, hoisin sauce, water, and brown sugar (or sugar substitute).
  5. Pour the sauce mixture into the skillet with the garlic and ginger. Stir to combine.
  6. Add the cooked beef back to the skillet and cook for another 2-3 minutes, allowing the sauce to thicken and coat the beef.
  7. Stir in the cooked whole wheat spaghetti and toss to combine with the beef and sauce. Cook for another 2-3 minutes to heat through.
  8. Remove the skillet from heat and add the sliced green onions, sesame oil, and crushed red pepper flakes if you want a little heat. Toss everything together.
  9. Serve the Mongolian Ground Beef Noodles hot.
