4-ingredient homemade spinach gnocchi
Ingredients:
- 2 cups fresh spinach (or 1 cup cooked and drained)
- 1 cup ricotta cheese
- 1 cup all-purpose flour (or more as needed)
- 1/2 cup grated Parmesan cheese
Instructions:
- Cook the Spinach – If using fresh spinach, steam or blanch it until wilted. Squeeze out as much moisture as possible and finely chop.
- Mix Ingredients – In a bowl, combine spinach, ricotta, Parmesan, and flour. Mix until a soft dough forms. Add extra flour if too sticky.
- Shape the Gnocchi – Divide the dough into small portions and roll into ropes. Cut into bite-sized pieces. Press lightly with a fork for texture.
- Cook the Gnocchi – Bring salted water to a boil. Drop the gnocchi in and cook until they float (about 2 minutes). Remove with a slotted spoon.
