2 points per muffin HEALTHY BANANA MUFFINS

These healthy banana muffins are bursting with luscious banana flavor! There is no oil or butter in these muffins, and they are a delicious breakfast or snack.
INGREDIENTS
- 4 medium-sized ripe bananas
- 2 eggs
- 1/4 CUP unsweetened applesauce
- 1 TSP vanilla extract
- 3/4 CUP sugar or sugar substitute with a 1:1 ratio
- 1 ¾ CUP all-purpose flour
- 1 TSP baking soda
- 1/4 TSP salt
- 1/4 TSP cinnamon
- pinch of nutmeg
DIRECTIONS
- Peel the bananas and add them to a large bowl. Then, mash the bananas with a fork.
- Add the eggs, unsweetened applesauce, and vanilla extract to the bowl with the mashed bananas. Then, whisk these wet ingredients together.
- Add the sugar to the bowl with the wet ingredients and mix.
- In a separate large bowl, mix the all-purpose flour, baking soda, salt, cinnamon, and nutmeg.
- Add the dry ingredients to the wet ingredients a little at a time and mix. Combine the wet and dry ingredients, but don’t overmix.
- Lightly spray a non-stick silicone muffin pan with oil or use muffin liners. Then, pour the batter into the muffin liners. This recipe makes 12-16 muffins.
- Bake the muffins at 350 degrees Fahrenheit for 24-26 minutes. Once done, let the muffins cool on a cooling rack and enjoy!
