🛒 Ingredients:

  • 4 hard-boiled eggs, peeled and chopped
  • 1 ripe avocado, peeled and diced
  • 1–2 tbsp Greek yogurt or mayo
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice (or more to taste)
  • 1 tbsp chopped chives or green onions
  • Salt & black pepper, to taste
  • Optional add-ins:
    • 1/4 tsp garlic powder or smoked paprika
    • Dash of hot sauce or chili flakes for heat
    • Chopped celery or pickles for crunch

👩‍🍳 Instructions:

  1. Prep the eggs & avocado:
    • Chop hard-boiled eggs and place in a medium bowl.
    • Add diced avocado and gently mash (leave it chunky or creamy — your choice).
  2. Mix it up:
    • Add Greek yogurt or mayo, Dijon mustard, lemon juice, and chives.
    • Season with salt, pepper, and any optional spices or extras.
  3. Stir to combine:
    • Gently mix everything until well combined and creamy.
    • Taste and adjust seasoning or lemon as needed.

🥪 How to Serve:

  • On whole grain or sourdough toast
  • In lettuce wraps or low-carb tortillas
  • As a sandwich filling or pita stuffing
  • Over mixed greens as a salad bowl
