- 4 hard-boiled eggs, peeled and chopped
- 1 ripe avocado, peeled and diced
- 1–2 tbsp Greek yogurt or mayo
- 1 tsp Dijon mustard
- 1 tsp lemon juice (or more to taste)
- 1 tbsp chopped chives or green onions
- Salt & black pepper, to taste
- Optional add-ins:
- 1/4 tsp garlic powder or smoked paprika
- Dash of hot sauce or chili flakes for heat
- Chopped celery or pickles for crunch
👩🍳 Instructions:
- Prep the eggs & avocado:
- Chop hard-boiled eggs and place in a medium bowl.
- Add diced avocado and gently mash (leave it chunky or creamy — your choice).
- Mix it up:
- Add Greek yogurt or mayo, Dijon mustard, lemon juice, and chives.
- Season with salt, pepper, and any optional spices or extras.
- Stir to combine:
- Gently mix everything until well combined and creamy.
- Taste and adjust seasoning or lemon as needed.
