Zero Point Sheet Pan Shrimp Fajitas

Ingredients:
- 1 pound large shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
- Whole wheat tortillas (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the sliced bell peppers, onion, and shrimp.
- In a small bowl, mix together the olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper to create a seasoning blend.
- Drizzle the seasoning mixture over the shrimp and vegetables. Toss everything together until well coated.
- Spread the shrimp and vegetable mixture evenly on a baking sheet lined with parchment paper or sprayed with cooking spray.
- Bake in the preheated oven for about 15-20 minutes or until the shrimp is cooked through and the vegetables are tender. Stir halfway through the cooking time to ensure even cooking.
- Remove from the oven and garnish with fresh cilantro.
- Serve the sheet pan shrimp fajitas with lime wedges. Optionally, you can warm whole wheat tortillas and serve the fajita mixture as a filling.
