Zero Point Sheet Pan Shrimp Fajitas


  • 1 pound large shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)
  • Whole wheat tortillas (optional)


  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the sliced bell peppers, onion, and shrimp.
  3. In a small bowl, mix together the olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper to create a seasoning blend.
  4. Drizzle the seasoning mixture over the shrimp and vegetables. Toss everything together until well coated.
  5. Spread the shrimp and vegetable mixture evenly on a baking sheet lined with parchment paper or sprayed with cooking spray.
  6. Bake in the preheated oven for about 15-20 minutes or until the shrimp is cooked through and the vegetables are tender. Stir halfway through the cooking time to ensure even cooking.
  7. Remove from the oven and garnish with fresh cilantro.
  8. Serve the sheet pan shrimp fajitas with lime wedges. Optionally, you can warm whole wheat tortillas and serve the fajita mixture as a filling.
