Egg Tart Recipe:

Ingredients:

For the Pastry:

  • 1 package (16 oz) of frozen phyllo dough, thawed

Instructions:

  1. Preheat your oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Phyllo Dough: Lay out the thawed phyllo dough and cut it into squares large enough to line the cups of a muffin tin. Use a non-stick cooking spray to lightly grease each cup.
  3. Line the Muffin Tin: Gently press the phyllo dough squares into the muffin tin cups, forming a small pastry shell in each.
  4. Prepare the Custard Filling: In a saucepan, heat the milk over medium heat until it’s almost boiling. While the milk is heating, whisk together the sugar substitute, egg yolks, cornstarch, vanilla extract, and a pinch of salt in a separate bowl.
  5. Temper the Egg Mixture: To avoid curdling the eggs, slowly add the hot milk to the egg mixture while constantly whisking. This process is called tempering. Once combined, return the mixture to the saucepan.
  6. Cook the Custard: Cook the custard mixture over low heat, stirring constantly, until it thickens and coats the back of a spoon. This should take about 5-7 minutes. Remove it from heat and let it cool slightly.
  7. Fill the Pastry Shells: Carefully pour the custard mixture into the prepared phyllo dough shells.
  8. Bake: Place the muffin tin in the preheated oven and bake for about 15-20 minutes or until the custard is set and the pastry is golden brown.
  9. Cool and Serve: Let the tarts cool in the muffin tin for a few minutes, then transfer them to a wire rack to cool completely. Sprinkle a little ground cinnamon on top if desired.
