WW HEALTHY EASY STUFFED PEPPERS

Ingredients:

  • 4 large bell peppers (any color)
  • 1 lb lean ground turkey or chicken
  • 1 cup quinoa, cooked
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup diced tomatoes
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar, Mexican blend, or your choice)
  • Fresh cilantro, chopped, for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers, remove seeds, and any white membranes. Lightly salt the inside of each pepper and set aside.
  3. In a large skillet, cook the ground turkey or chicken over medium heat until fully cooked. Drain any excess fat.
