WEIGHT WATCHERS TORTELLINI SOUP
Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1 can (14 oz) diced tomatoes, undrained
- 6 cups fat-free chicken or vegetable broth
- 9 oz refrigerated cheese tortellini (choose a lower SmartPoints option if available)
- 2 cups fresh spinach, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for garnish (optional)
Instructions:
- Saute Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and chopped celery. Cook until the vegetables are softened.
- Add Aromatics: Stir in the minced garlic, dried oregano, dried basil, and dried thyme. Cook for an additional minute until the herbs are fragrant.
- Add Tomatoes and Broth: Pour in the diced tomatoes (with their juice) and the fat-free chicken or vegetable broth. Bring the mixture to a boil.
- Add Tortellini: Once boiling, add the refrigerated cheese tortellini to the pot. Cook according to the package instructions or until the tortellini are tender.
- Add Spinach: Stir in the chopped fresh spinach and cook until wilted.
- Season: Season the soup with salt and pepper to taste. Adjust the seasoning as needed.
- Serve: Ladle the Weight Watchers Tortellini Soup into bowls. Optionally, garnish with grated Parmesan cheese.
