WEIGHT WATCHERS TORTELLINI SOUP

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1 can (14 oz) diced tomatoes, undrained
  • 6 cups fat-free chicken or vegetable broth
  • 9 oz refrigerated cheese tortellini (choose a lower SmartPoints option if available)
  • 2 cups fresh spinach, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish (optional)

Instructions:

  1. Saute Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and chopped celery. Cook until the vegetables are softened.
  2. Add Aromatics: Stir in the minced garlic, dried oregano, dried basil, and dried thyme. Cook for an additional minute until the herbs are fragrant.
  3. Add Tomatoes and Broth: Pour in the diced tomatoes (with their juice) and the fat-free chicken or vegetable broth. Bring the mixture to a boil.
  4. Add Tortellini: Once boiling, add the refrigerated cheese tortellini to the pot. Cook according to the package instructions or until the tortellini are tender.
  5. Add Spinach: Stir in the chopped fresh spinach and cook until wilted.
  6. Season: Season the soup with salt and pepper to taste. Adjust the seasoning as needed.
  7. Serve: Ladle the Weight Watchers Tortellini Soup into bowls. Optionally, garnish with grated Parmesan cheese.
