Weight Watchers Tater Tot Casserole – 10 Points per Serving

Ingredients:

  • 1 lb extra-lean ground turkey or chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) condensed reduced-fat, reduced-sodium cream of mushroom soup
  • 1 cup fat-free Greek yogurt
  • 1 cup reduced-fat shredded cheddar cheese
  • Salt and pepper to taste
  • 1 lb frozen tater tots
  • Cooking spray

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook Ground Turkey:
    • In a skillet over medium heat, cook the ground turkey until browned. Add chopped onions and minced garlic, and cook until the onions are softened. Season with salt and pepper.
  3. Combine Soup and Yogurt:
    • In a bowl, mix together the condensed cream of mushroom soup and fat-free Greek yogurt.
  4. Assemble the Casserole:
    • In a baking dish coated with cooking spray, spread the cooked ground turkey mixture evenly.
    • Pour the soup and yogurt mixture over the ground turkey.
    • Sprinkle the shredded cheddar cheese on top.
    • Arrange the frozen tater tots in a single layer over the cheese.
  5. Bake:
    • Bake in the preheated oven for about 30-35 minutes or until the tater tots are golden brown, and the casserole is bubbly.
  6. Serve:
    • Allow the casserole to cool for a few minutes before serving.
  7. Portion and Calculate Points:
    • Divide the casserole into equal servings. Make sure to check and calculate the points based on your specific Weight Watchers plan.
  8. Garnish (Optional):
    • Garnish with chopped fresh parsley or green onions if desired.
