Weight Watchers Tater Tot Casserole – 10 Points per Serving
Ingredients:
- 1 lb extra-lean ground turkey or chicken
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (10.5 oz) condensed reduced-fat, reduced-sodium cream of mushroom soup
- 1 cup fat-free Greek yogurt
- 1 cup reduced-fat shredded cheddar cheese
- Salt and pepper to taste
- 1 lb frozen tater tots
- Cooking spray
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Cook Ground Turkey:
- In a skillet over medium heat, cook the ground turkey until browned. Add chopped onions and minced garlic, and cook until the onions are softened. Season with salt and pepper.
- Combine Soup and Yogurt:
- In a bowl, mix together the condensed cream of mushroom soup and fat-free Greek yogurt.
- Assemble the Casserole:
- In a baking dish coated with cooking spray, spread the cooked ground turkey mixture evenly.
- Pour the soup and yogurt mixture over the ground turkey.
- Sprinkle the shredded cheddar cheese on top.
- Arrange the frozen tater tots in a single layer over the cheese.
- Bake:
- Bake in the preheated oven for about 30-35 minutes or until the tater tots are golden brown, and the casserole is bubbly.
- Serve:
- Allow the casserole to cool for a few minutes before serving.
