Weight Watchers Strawberry and cottage cheese muffins

Ingredients:

1 cup diced strawberries

cup low-fat cottage cheese

1 1/2 cups all-purpose flour

1/2 cup sugar substitute

1/2 cup unsweetened applesauce

2 eggs

1 tsp vanilla extract

1/2 tsp baking soda

1 1/2 tsp baking powder

Pinch of salt

Instructions:

Preheat oven to 350°F (175°C).

Mix dry ingredients (flour, baking soda, baking powder, salt).

Combine wet ingredients (sugar substitute, applesauce, eggs, vanilla).

Gradually blend dry into wet ingredients.

Fold in strawberries and cottage cheese.

Spoon into muffin cups and bake for 18-22 minutes.

Cool and enjoy this 1-point delight!
