Weight Watchers Seven Layer Dip
Ingredients:
- Refried Beans Layer:
- 1 can (16 ounces) fat-free refried beans
- Guacamole Layer:
- 2 medium avocados, mashed
- 1 tablespoon lime juice
- 1 clove garlic, minced
- Salt and pepper to taste
- Sour Cream Layer:
- 1 cup fat-free Greek yogurt or fat-free sour cream
- Salsa Layer:
- 1 cup fresh salsa (pico de gallo) or sugar-free store-bought salsa
- Cheese Layer:
- 1 cup reduced-fat shredded cheddar cheese
- Vegetable Layer:
- 1 cup diced tomatoes
- Green Onion Layer:
- 1/2 cup chopped green onions
- Optional Toppings (not included in the seven layers):
- Sliced black olives
- Jalapeño slices
- Fresh cilantro, chopped
Instructions:
- Prepare the Layers:
- Refried Beans Layer:
- Spread the fat-free refried beans evenly on the bottom of a serving dish.
- Guacamole Layer:
- In a bowl, mash the avocados and mix with lime juice, minced garlic, salt, and pepper. Spread this guacamole layer over the refried beans.
- Sour Cream Layer:
- Spread the fat-free Greek yogurt or sour cream over the guacamole layer.
- Salsa Layer:
- Add a layer of fresh salsa or sugar-free store-bought salsa.
- Cheese Layer:
- Sprinkle the reduced-fat shredded cheddar cheese over the salsa layer.
- Vegetable Layer:
- Top with diced tomatoes.
- Green Onion Layer:
- Finish with a layer of chopped green onions.
- Refried Beans Layer:
- Optional Toppings:
- If desired, garnish the top with sliced black olives, jalapeño slices, and chopped fresh cilantro.
- Chill and Serve:
- Refrigerate the Seven Layer Dip for at least 30 minutes before serving to allow the flavors to meld.
- Serve with baked tortilla chips or fresh vegetable sticks.
