Weight Watchers Peanut Butter Chocolate Banana Muffins
These Weight Watchers Peanut Butter Chocolate Banana Muffins use pancake mix as a base to produce a delicious, easy breakfast perfect for Weight Watchers meal prep.

Ingredients
- 2 1⁄2 cups dry mix protein pancake mix (I used Krusteaz Buttermilk)
- 4 Tbsp PBfit Pure peanut powder
- 4 large Eggs
- 3 medium Bananas
- 1 cup fat-free sour cream or Member’s Mark Nonfat plain Greek yogurt
- 1/2 cup unsweetened applesauce
- 2 tsp Vanilla extract
- 1⁄3 cup Lakanto Monkfruit sweetener
- 1⁄2 cup Plain unsweetened almond milk
- 70 gm Lily’s Semi-Sweet Style Baking Chips
Instructions
- Mash up bananas well in a large bowl.
- Then add eggs, yogurt, applesauce, vanilla, sweetener, milk and mix well.
- In a medium bowl, mix pancake mix and PBfit powder together.
- Add dry ingredients into wet and mix until combined well.
- Fold in chocolate chips.
- Fill the muffin cups, 20 muffins.
- Then bake at 400F for about 15-18 minutes until slightly browned.
