Weight Watchers Parmesan Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup whole wheat breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 2 large eggs, beaten
- Cooking spray
Instructions:
- Preheat Oven:
- Preheat your oven to 400°F (200°C).
- Prepare Breading Mixture:
- In a shallow dish, combine the whole wheat breadcrumbs, grated Parmesan cheese, dried oregano, dried basil, garlic powder, onion powder, salt, and pepper. Mix well.
- Dip Chicken:
- Dip each chicken breast into the beaten eggs, making sure to coat both sides.
- Coat with Breadcrumb Mixture:
- Press each side of the chicken into the breadcrumb mixture, ensuring an even coating.
- Bake:
- Place the breaded chicken breasts on a baking sheet sprayed with cooking spray. Bake in the preheated oven for about 20-25 minutes or until the chicken is cooked through and the coating is golden and crispy.
- Serve:
- Remove from the oven and let it rest for a few minutes. Serve the Parmesan chicken with a side of steamed vegetables or a fresh salad.
