Weight Watchers Parmesan Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup whole wheat breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 large eggs, beaten
  • Cooking spray

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare Breading Mixture:
    • In a shallow dish, combine the whole wheat breadcrumbs, grated Parmesan cheese, dried oregano, dried basil, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Dip Chicken:
    • Dip each chicken breast into the beaten eggs, making sure to coat both sides.
  4. Coat with Breadcrumb Mixture:
    • Press each side of the chicken into the breadcrumb mixture, ensuring an even coating.
  5. Bake:
    • Place the breaded chicken breasts on a baking sheet sprayed with cooking spray. Bake in the preheated oven for about 20-25 minutes or until the chicken is cooked through and the coating is golden and crispy.
  6. Serve:
    • Remove from the oven and let it rest for a few minutes. Serve the Parmesan chicken with a side of steamed vegetables or a fresh salad.
