Weight Watchers Lemon Muffins Recipe (1 Point Plus or 2 Points)
Ingredients:
- 1 cup all-purpose flour
- 1 cup self-rising flour

Instructions:
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.
- In a mixing bowl, whisk together the all-purpose flour, self-rising flour, granulated sugar, baking powder, baking soda, salt, and lemon zest.
- In another bowl, combine the lemon juice, unsweetened applesauce, eggs, vanilla extract, Greek yogurt, and water. Mix until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Divide the batter evenly among the prepared muffin cups.
- Bake in the preheated oven for about 15-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Baking times may vary depending on your oven, so keep an eye on them.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
For 1 Point Plus:
If you want to make these muffins 1 Point Plus each, you can omit the sugar and use a sugar substitute like Stevia or Erythritol. This will reduce the overall points value.
For 2 Points:
If you prefer to use granulated sugar and are okay with the muffins being 2 Points each, simply follow the recipe as written.
