Weight Watchers Lemon Blueberry Muffins

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup granulated sugar substitute (like Stevia or monk fruit)
  • 1/4 cup brown sugar substitute (like Swerve or Truvia)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
  • 1/4 cup unsweetened applesauce
  • 1/4 cup plain non-fat Greek yogurt
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or coat with non-stick cooking spray.
  2. Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar substitute, brown sugar substitute, baking powder, baking soda, and salt.
  3. Add Blueberries and Lemon Zest: Gently fold in the fresh blueberries and lemon zest into the dry ingredients until the blueberries are evenly distributed.
  4. Wet Ingredients: In another bowl, whisk together the lemon juice, applesauce, Greek yogurt, melted butter, egg, and vanilla extract.
  5. Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix.
  6. Fill Muffin Cups: Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes:

  • Sweeteners: Choose sugar substitutes that are suitable for baking and are approved by your preferred weight loss program. Adjust the quantities based on the sweetness level you desire.
  • Blueberries: If fresh blueberries are not available, you can use frozen blueberries. Just be sure to fold them into the batter gently to avoid discoloration.
  • Portion Control: Ensure that you portion the batter evenly among the muffin cups to help manage the SmartPoints value.
  • Storage: Store the muffins in an airtight container. They can also be frozen for longer storage.
