Weight Watchers Lasagna Recipe

Ingredients:

For the Meat Sauce:

  • 1 lb extra-lean ground turkey or lean ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) tomato sauce
  • 1 can (6 oz) tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Cheese Filling:

  • 1 container (15 oz) fat-free ricotta cheese
  • 1 cup part-skim mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Other Ingredients:

  • 9 whole wheat lasagna noodles, cooked according to package instructions
  • 1 cup part-skim mozzarella cheese, shredded (for topping)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Meat Sauce:
    • In a large skillet, brown the ground turkey or beef over medium heat. Add chopped onions and minced garlic, cooking until the onions are softened.
    • Stir in crushed tomatoes, tomato sauce, tomato paste, dried basil, dried oregano, salt, and pepper. Simmer for about 15-20 minutes, allowing the flavors to meld.
  3. Prepare the Cheese Filling:
    • In a bowl, combine ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, egg, chopped parsley, salt, and pepper. Mix well.
  4. Assemble the Lasagna:
    • In a 9×13 inch baking dish, spread a thin layer of the meat sauce on the bottom.
    • Place three cooked lasagna noodles on top of the sauce.
    • Spread half of the cheese filling over the noodles.
    • Repeat the layers, ending with a layer of meat sauce on top.
  5. Top with Mozzarella:
    • Sprinkle the remaining mozzarella cheese over the top layer.
  6. Bake:
    • Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  7. Rest and Serve:
    • Allow the lasagna to rest for 10-15 minutes before slicing and serving.
  8. Portion and Calculate Points:
    • Divide the lasagna into equal servings. Make sure to check and calculate the points based on your specific Weight Watchers plan.
