Weight Watchers Lasagna Recipe
Ingredients:
For the Meat Sauce:
- 1 lb extra-lean ground turkey or lean ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 can (14 oz) tomato sauce
- 1 can (6 oz) tomato paste
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Cheese Filling:
- 1 container (15 oz) fat-free ricotta cheese
- 1 cup part-skim mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Other Ingredients:
- 9 whole wheat lasagna noodles, cooked according to package instructions
- 1 cup part-skim mozzarella cheese, shredded (for topping)
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Meat Sauce:
- In a large skillet, brown the ground turkey or beef over medium heat. Add chopped onions and minced garlic, cooking until the onions are softened.
- Stir in crushed tomatoes, tomato sauce, tomato paste, dried basil, dried oregano, salt, and pepper. Simmer for about 15-20 minutes, allowing the flavors to meld.
- Prepare the Cheese Filling:
- In a bowl, combine ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, egg, chopped parsley, salt, and pepper. Mix well.
- Assemble the Lasagna:
- In a 9×13 inch baking dish, spread a thin layer of the meat sauce on the bottom.
- Place three cooked lasagna noodles on top of the sauce.
- Spread half of the cheese filling over the noodles.
- Repeat the layers, ending with a layer of meat sauce on top.
- Top with Mozzarella:
- Sprinkle the remaining mozzarella cheese over the top layer.
- Bake:
- Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Rest and Serve:
- Allow the lasagna to rest for 10-15 minutes before slicing and serving.
- Portion and Calculate Points:
- Divide the lasagna into equal servings. Make sure to check and calculate the points based on your specific Weight Watchers plan.
