Weight Watchers Creamy Pasta with Asparagus and Bacon
Ingredients:
- 8 oz whole wheat or high-fiber pasta
- 1 lb fresh asparagus, trimmed and cut into bite-sized pieces
- 4 slices lean bacon, chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup fat-free Greek yogurt
- 1/2 cup grated Parmesan cheese
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish (optional)
Instructions:
- Cook Pasta:
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- Cook Bacon and Asparagus:
- In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and set it aside.
- In the same skillet, add the asparagus and cook for about 3-5 minutes or until tender-crisp. Remove the asparagus and set it aside with the bacon.
- Saute Onion and Garlic:
- In the same skillet, add chopped onion and minced garlic. Saute until the onion is softened.
- Prepare Creamy Sauce:
- Reduce the heat to low and stir in the fat-free Greek yogurt, grated Parmesan cheese, lemon zest, and lemon juice. Mix until well combined.
- Combine Pasta, Asparagus, and Bacon:
- Add the cooked pasta, asparagus, and bacon to the skillet. Toss everything together until the pasta is coated in the creamy sauce.
- Season:
- Season with salt and black pepper to taste. Adjust the seasoning as needed.
- Serve:
- Serve the creamy pasta with asparagus and bacon in bowls, garnished with fresh parsley if desired.
