Weight Watchers Chocolate Eclair Dessert | No Bake


For the Filling:

  • 2 (1 oz) packages sugar-free vanilla instant pudding mix
  • 3 cups skim milk
  • 1 (8 oz) container fat-free whipped topping

For the Layers:

  • 1 package of reduced-fat graham crackers

For the Topping:

  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar substitute (such as erythritol or Stevia)
  • 1/4 cup skim milk
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract


  1. Prepare the Filling:
    • In a large mixing bowl, combine the sugar-free vanilla instant pudding mix and skim milk. Whisk until well combined.
    • Let it sit for a few minutes to allow the pudding to thicken.
    • Fold in the fat-free whipped topping until the mixture is smooth.
  2. Assemble the Layers:
    • In a 9×13 inch baking dish, arrange a layer of graham crackers to cover the bottom.
  3. Add the Filling:
    • Pour half of the pudding mixture over the graham crackers layer and spread it evenly.
  4. Repeat Layers:
    • Add another layer of graham crackers on top of the pudding mixture.
    • Pour the remaining pudding mixture over the second layer of graham crackers and spread it evenly.
  5. Final Layer:
    • Top with a final layer of graham crackers.
  6. Prepare the Chocolate Topping:
    • In a saucepan over medium heat, combine cocoa powder, sugar substitute, skim milk, and unsalted butter.
    • Stir constantly until the mixture is smooth and well combined.
    • Remove from heat and stir in the vanilla extract.
  7. Top the Dessert:
    • Pour the chocolate topping over the final layer of graham crackers, spreading it evenly.
  8. Chill:
    • Refrigerate the dessert for at least 4 hours or overnight to allow it to set.
  9. Serve:
    • Cut into squares and serve chilled.
