Weight Watchers Chicken Fajitas:

Ingredients:
- 1 lb boneless, skinless chicken breasts, sliced into thin strips
- 1 tablespoon olive oil
- 1 onion, thinly sliced
- 1 bell pepper (any color), thinly sliced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Juice of 1 lime
- 8 small whole wheat or corn tortillas
- Optional toppings: salsa, low-fat Greek yogurt, shredded lettuce, chopped tomatoes, cilantro
Instructions:
- Marinate the Chicken:
- In a bowl, combine chicken strips with chili powder, cumin, smoked paprika, garlic powder, salt, pepper, and lime juice. Let it marinate for at least 15-20 minutes.
- Cook the Chicken:
- Heat olive oil in a skillet over medium-high heat.
- Add marinated chicken strips and cook until they are browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- Sauté Vegetables:
- In the same skillet, add a bit more olive oil if needed.
- Add sliced onions and bell peppers. Sauté until they are tender-crisp, about 3-5 minutes.
- Combine Chicken and Vegetables:
- Return the cooked chicken to the skillet with the sautéed vegetables. Toss everything together until well combined and heated through.
- Warm Tortillas:
- Heat tortillas in a dry skillet or microwave according to package instructions.
- Assemble Fajitas:
- Spoon the chicken and vegetable mixture onto each tortilla.
- Add your favorite toppings such as salsa, low-fat Greek yogurt, shredded lettuce, chopped tomatoes, and cilantro.
