Weight Watchers Chicken Fajitas:

Ingredients:

  • 1 lb boneless, skinless chicken breasts, sliced into thin strips
  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 1 bell pepper (any color), thinly sliced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Juice of 1 lime
  • 8 small whole wheat or corn tortillas
  • Optional toppings: salsa, low-fat Greek yogurt, shredded lettuce, chopped tomatoes, cilantro

Instructions:

  1. Marinate the Chicken:
    • In a bowl, combine chicken strips with chili powder, cumin, smoked paprika, garlic powder, salt, pepper, and lime juice. Let it marinate for at least 15-20 minutes.
  2. Cook the Chicken:
    • Heat olive oil in a skillet over medium-high heat.
    • Add marinated chicken strips and cook until they are browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  3. Sauté Vegetables:
    • In the same skillet, add a bit more olive oil if needed.
    • Add sliced onions and bell peppers. Sauté until they are tender-crisp, about 3-5 minutes.
  4. Combine Chicken and Vegetables:
    • Return the cooked chicken to the skillet with the sautéed vegetables. Toss everything together until well combined and heated through.
  5. Warm Tortillas:
    • Heat tortillas in a dry skillet or microwave according to package instructions.
  6. Assemble Fajitas:
    • Spoon the chicken and vegetable mixture onto each tortilla.
    • Add your favorite toppings such as salsa, low-fat Greek yogurt, shredded lettuce, chopped tomatoes, and cilantro.
