Weight Watchers Chicken Broccoli CasseroleI

Ingredients:

  • 2 cups cooked chicken breast, shredded or diced
  • 2 cups broccoli florets, steamed or blanched
  • 1 cup reduced-fat shredded cheddar cheese
  • 1 cup non-fat Greek yogurt
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup light mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooking spray

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine Greek yogurt, chicken broth, light mayonnaise, Dijon mustard, garlic powder, salt, and pepper. Mix well until smooth.
  3. Add shredded chicken, steamed broccoli florets, and half of the shredded cheddar cheese to the bowl. Mix everything together until well combined.
  4. Lightly spray a baking dish with cooking spray. Transfer the chicken and broccoli mixture into the baking dish, spreading it evenly.
  5. Sprinkle the remaining shredded cheddar cheese over the top.
  6. Bake in the preheated oven for about 25-30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  7. Remove from the oven and let it cool for a few minutes before serving.
