Weight Watchers Blueberry Yogurt Protein Bars

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1/2 cup almond flour
  • 1/4 cup vanilla protein powder
  • 1/4 cup honey or agave syrup
  • 1/4 cup plain non-fat Greek yogurt
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/2 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
  2. In a large mixing bowl, combine the rolled oats, almond flour, and vanilla protein powder.
  3. In another bowl, mix the honey (or agave syrup), Greek yogurt, applesauce, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Gently fold in the blueberries.
  6. Spread the mixture evenly into the prepared baking dish.
  7. Bake for 20-25 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the bars to cool completely in the baking dish before cutting them into squares.
