Weight Watchers Apple Crisp

Ingredients:

For the Filling:

  • 6 medium-sized apples, peeled, cored, and sliced
  • 2 tablespoons lemon juice
  • 1/4 cup granulated sugar substitute (like Stevia or monk fruit)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg

For the Topping:

  • 1 cup old-fashioned oats
  • 1/4 cup whole wheat flour
  • 1/4 cup granulated sugar substitute
  • 1/4 cup light brown sugar, packed
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Filling:
    • In a large bowl, toss the sliced apples with lemon juice, sugar substitute, ground cinnamon, and nutmeg. Transfer the apple mixture to a baking dish.
  3. Prepare the Topping:
    • In another bowl, combine the old-fashioned oats, whole wheat flour, sugar substitute, brown sugar, salt, melted butter, and vanilla extract. Mix until the topping is crumbly.
  4. Assemble and Bake:
    • Sprinkle the oat topping evenly over the apples in the baking dish.
  5. Bake in the Oven:
    • Bake in the preheated oven for 35-40 minutes or until the topping is golden brown, and the apples are tender.
  6. Serve:
    • Remove from the oven and let it cool for a few minutes. Serve the apple crisp warm, and optionally, top with a dollop of low-fat vanilla yogurt or a scoop of light vanilla ice cream.
