Weight watcher Stuffed mushrooms caps:
Preheat oven to 350
Mushrooms I used white
Stems off mushrooms
1 large Vidalia onion
Whipped cream cheese
Chicken broth
Destem mushrooms
Chop up onion and mushroom stems
Sautee onion in chicken broth for about 6 minutes, add mushrooms for 4 more minutes. Keep just enough chicken broth on until it evaporates then add more immediately. I add tons of spices here like onion/garlic powder, whatever you like.
Once soft and brown, mix in 2 tbs whipped cream cheese MIX WELL.
Stuff the caps (doesn’t take much) and bake on cookie sheet sprayed with cooking spray at 350 for about 15 minutes.
I did add a tiny bit of low fat mozz cheese to these, but it didn’t add anything to it so would leave that out next time. Didn’t get an after picture because they were gone.
Not putting the points down bc people always argue about points. But it’s absolutely delicious and filling.
