Weight Watcher! BUTTER CHICKEN WITH GARLIC NAAN BREAD

Soft, fluffy and delicious homemade naan bread made with just TWO ingredients! This 2 ingredient dough naan bread is healthier than traditional naan and takes less than 10 minutes to make- no yeast!
This Healthy Butter Chicken Recipe has no butter, a creamy tomato sauce, is gluten-free, easy to make and is Weight Watchers Friendly!
Ingredients:
For the Marinade:
1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
1/2 cup plain non-fat Greek yogurt
1 tsp garam masala
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp paprika
1/2 tsp turmeric
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp cayenne pepper (adjust to your spice preference)
Salt and black pepper to taste
For the Sauce:
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1-inch piece of ginger, grated
1 can (14 oz) diced tomatoes, no sugar added
1/4 cup tomato paste
1/2 cup non-fat plain Greek yogurt
1/2 cup fat-free chicken broth
1 tsp garam masala
1/2 tsp ground cumin
Salt and black pepper to taste
Fresh cilantro for garnish (optional)
Instructions:
In a bowl, combine the yogurt, garam masala, ground cumin, ground coriander, paprika, turmeric, ground ginger, ground cinnamon, cayenne pepper, salt, and black pepper. Mix well to make the marinade.
Add the chicken pieces to the marinade and ensure they are well-coated. Cover and refrigerate for at least 30 minutes, or longer for better flavor.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 3-5 minutes.
Add the minced garlic and grated ginger to the skillet. Cook for an additional 1-2 minutes until fragrant.
Stir in the diced tomatoes, tomato paste, non-fat Greek yogurt, chicken broth, garam masala, ground cumin, salt, and black pepper. Mix well and bring the mixture to a simmer.
Add the marinated chicken pieces and cook for about 15-20 minutes, or until the chicken is fully cooked and the sauce has thickened.
Adjust the seasoning to taste.
Serve the butter chicken over cooked brown rice or cauliflower rice. Garnish with fresh cilantro if desired.
GARLIC NAAN BREAD:
Ingredients
▢1 3/4 cups self-rising flour use gluten-free, if needed
▢1 cup Greek Yogurt vegan Greek yogurt, non-fat, full-fat or reduced fat
▢1/2 teaspoon salt
▢1 tablespoon butter of choice Optional, to brush naan breads
Instructions
In a large mixing bowl, combine your flour, salt (if using it) and Greek yogurt. Mix well, until combined. Then, use your hands to form a large ball of dough.
Lightly flour a wooden or kitchen surface. Sprinkle a little extra flour on top of the ball of dough, before transferring it to the floured surface. Flatten into a circular shape and divide into 8 even portions. Flatten each portion into a rectangular shape (like a classic Naan bread).
Heat a non-stick saucepan on medium heat. When hot, place flattened dough and cook for 3 minutes, before flipping and cooking a further 2 minutes. Repeat until all the naan bread is cooked.
Once cooked, if desired, lightly brush the tops of each naan bread with melted butter.
Notes
This recipe will NOT work with almond flour or coconut flour. It must use self-rising flour.
