Vegan Quinoa Bites

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 cup cooked black beans, drained and rinsed
  • 1 cup finely chopped mixed vegetables (such as bell peppers, carrots, and zucchini)
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup nutritional yeast (optional, for extra flavor)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Vegan cheese (optional, for topping)

Instructions:

  1. Cook the quinoa: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let it cool slightly.
  2. Preheat the oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with oil.
  3. Prepare the mixture: In a large mixing bowl, combine the cooked quinoa, black beans, chopped vegetables, onion, garlic, nutritional yeast (if using), cumin, paprika, salt, and pepper. Mix well to combine all the ingredients evenly.
  4. Form the bites: Take about 1-2 tablespoons of the mixture and form it into small bite-sized balls or patties. Place them on the prepared baking sheet, leaving a little space between each bite.
  5. Bake: Brush the tops of the quinoa bites with olive oil for a crispy texture (optional). Bake in the preheated oven for 20-25 minutes, or until the bites are golden brown and slightly crispy on the outside.
  6. Serve: Once done, remove from the oven and let them cool for a few minutes before serving. Optionally, you can sprinkle some vegan cheese on top while they’re still warm for an extra savory touch.
  7. Enjoy: Serve these vegan quinoa bites as a healthy snack, appetizer, or even as a protein-packed addition to salads or Buddha bowls. Enjoy!
