Vegan Quinoa Bites
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups vegetable broth or water
- 1 cup cooked black beans, drained and rinsed
- 1 cup finely chopped mixed vegetables (such as bell peppers, carrots, and zucchini)
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup nutritional yeast (optional, for extra flavor)
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- Vegan cheese (optional, for topping)
Instructions:
- Cook the quinoa: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let it cool slightly.
- Preheat the oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with oil.
- Prepare the mixture: In a large mixing bowl, combine the cooked quinoa, black beans, chopped vegetables, onion, garlic, nutritional yeast (if using), cumin, paprika, salt, and pepper. Mix well to combine all the ingredients evenly.
- Form the bites: Take about 1-2 tablespoons of the mixture and form it into small bite-sized balls or patties. Place them on the prepared baking sheet, leaving a little space between each bite.
- Bake: Brush the tops of the quinoa bites with olive oil for a crispy texture (optional). Bake in the preheated oven for 20-25 minutes, or until the bites are golden brown and slightly crispy on the outside.
- Serve: Once done, remove from the oven and let them cool for a few minutes before serving. Optionally, you can sprinkle some vegan cheese on top while they’re still warm for an extra savory touch.
- Enjoy: Serve these vegan quinoa bites as a healthy snack, appetizer, or even as a protein-packed addition to salads or Buddha bowls. Enjoy!
