 Vegan Portobello Mushroom Wrap

A hearty, nutrient-rich wrap featuring meaty Portobello mushrooms, creamy hummus, and crisp veggies — perfect for lunch or dinner!

 Ingredients:

  • 1 large Portobello mushroom, sliced
  • 1/2 onion, sliced
  • 1/2 red bell pepper, sliced
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • 1/2 tsp dried oregano
  • 1 large tortilla wrap
  • 2–4 tbsp hummus or vegan mayo
  • 1/2 cup baby spinach or lettuce
  • Oil for sautéing

Instructions:

  1. Sauté mushroom, onion, and bell pepper in oil until tender.
  2. Mix soy sauce, balsamic, maple syrup, and oregano. Add to veggies and cook until glazed.
  3. Spread hummus on the wrap, add greens and veggies.
  4. Roll tightly, grill for 1–2 mins per side.
  5. Slice and serve with your favorite dipping sauce!

Tips:

  • Add tofu or tempeh for extra protein.
  • Use flavored hummus or vegan pesto for a twist.
  • Store leftovers in the fridge for up to 3 days.
