Vegan Mushroom Pâté Yummy

  • 2 cups of mushrooms (such as cremini or button), finely chopped
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1/4 cup of raw cashews
  • 1/4 cup of vegetable broth
  • 1 tablespoon of soy sauce or tamari
  • 1 tablespoon of nutritional yeast
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • Fresh parsley, for garnish (optional)

  1. Heat olive oil in a pan over medium heat. Add chopped onions and garlic, sauté until they become translucent, about 3-4 minutes.
  2. Add the chopped mushrooms to the pan and cook until they release their moisture and become tender, about 5-7 minutes.
  3. In a food processor or blender, combine the cooked mushrooms mixture, cashews, vegetable broth, soy sauce, nutritional yeast, dried thyme, salt, and pepper. Blend until smooth and creamy. You may need to scrape down the sides of the processor or blender a few times to ensure everything is well combined.
  4. Taste and adjust seasoning if needed. If the pâté is too thick, you can add a little more vegetable broth or olive oil to reach your desired consistency.
  5. Transfer the mushroom pâté to a serving dish and garnish with fresh parsley if desired.
  6. Serve the pâté with crackers, bread, or vegetable sticks. Enjoy!
